My Side Dish Dilemma

I always seem to get stuck in this rut about what to do for dinner. It feels like almost every day, I’m searching for something new, something to break out of the dinner mold. And it’s not usually the main dish that’s the problem. I most often times find myself asking, “What do I serve with this?”

The problem is that I feel like the plate looks so bare without a nice tasty side dish or vegetable. And whenever I feel like there’s just a little too much white space on a plate, I hop onto Search.MyRecipies.com for the answer to my problem.

Just type “Pecan” in the search field and you will easily come back with 1,000s of recipes from breakfast to lunch, dinner to dessert. My latest find for my side dish dilemma? Cheddar-Pecan Green Bean Casserole. It looks oh so tasty, and it’s filled with cheesy, pecan, green bean goodness.

Just go online and check it out. You’ll thank me and then wonder what you ever did without this site.

The End of Summer Salad

It’s August and that means that fall is coming up quick. Soon soups will become a weekly staple and heartier meals will be creeping back into kitchens everywhere.

I love summer salads, so I’m always sad when fall first hits. I love the crisp, cool air that comes with the change of the seasons, but that means I have to say goodbye to the crisp, cool greens that decorate my plate every summer as well.

So, as a tribute, I’m going to share with you my favorite summer salad before it’s too late. It’s super easy and can be made in a snap. All you have to do is purchase a bag of premixed and washed spring greens, candied pecans, dried cranberries, blue cheese and a bottle of really good raspberry vinaigrette. I prefer the creamier raspberry vinaigrettes; they don’t seem to have quite so much of a bite to them.

Arrange the lettuce on the plate, top with a generous helping of pecans, blue cheese crumbles and cranberries, drizzle with the dressing and enjoy. Sometimes the simplest things in life are the best.

Greek Salad - Lunch on Sunday

Got a taste for a simple Greek dish that’s perfect for parties? Try this recipe for Honey-Soaked Feta. I’m a huge fan of Greek food, and while I love to cook, I’m also a huge fan of making things simple. That’s why this recipe is perfect.

All you have to do is grab a 3-ounce block of Feta cheese, sprinkle it with some thyme, salt and pepper, then drizzle honey over the top. And, don’t forget the pecans. A couple of fresh pecan halves go great with this dish.

Butter Pecan Waffles

As much as we wanted ice cream for breakfast when we were little, we all grew up knowing that we couldn’t have it. But now you can when you follow this super simple recipe from Blue Bunny Ice Cream for decadent Blue Bunny Butter Pecan Waffles.

All you need is a few basic ingredients like flour, eggs and pecans, plus a box of Blue Bunny’s 100 Calorie Butter Pecan Bars. Just melt the Butter Pecan Bars, combine the ingredients and add a scoop of the mix to a pre-heated waffle iron.

I Heart Grilled Cheese

I know it might make me sound like I’m five years old, but I love grilled cheese. There is nothing better on a cold day than a bowl of creamy tomato soup paired up with an ooey, gooey crunchy grilled cheese sandwich.

Thankfully, I found this fantastic article on msnbc.com and they share my love of this spectacularly simple and indulgent sandwich.

The article gives hints, tricks and tips for making that picture-perfect grilled cheese sandwich, but the best part of this article is that I can experience grilled cheese in a whole new way thanks to ‘Wichcraft, New York’s infamous and adventurous sandwich shop. Instead of the usual bread and cheese combination, they serve up a “cheddar grilled cheese with ham and poached pears on cranberry-pecan bread.”

I don’t know about you, but that sounds ridiculously good to me. The sweet cranberries and pears mixed with the salty ham, creamy cheese and nutty crunch of the pecans is giving me a serious urge to fly out to New York just to try it.

Saturday Morning Brunch

There is nothing I love more than Saturday morning. The workweek is over. There’s no need for an alarm. And it’s the perfect day to make a fantastic brunch.

I usually sleep in a little on Saturday, but wake up early enough to make a great breakfast. And I make sure to switch it up every week. Last week was a goat cheese, spinach and tomato omelet, but this week will be Orange-Pecan French Toast Casserole courtesy of Cooking Light.

I haven’t made it before, but this looks so delicious. Plus it was rated “Outstanding” and has over 37 reviews. The best part is that you make it the night before so all you have to do is wake up and pop it in the oven.

Pumpkin Pecan Braid

Watching this video makes me wish that it were Thanksgiving, because I don’t want to have to wait to make it. This is a great instructional video on how to make a pumpkin pecan braid. Although I’m not a fan of how they say “pecan” at the beginning, I do love how they use basic, ready-made store ingredients like the refrigerated Pillsbury dough. It’s so simple and it looks so delicious.

Filled Pancakes

I really want the Ebelskiver Filled-Pancake Pan. Every time I go to Williams-Sonoma, I have to check it out. I don’t know why I haven’t purchased it yet, but I think I have to now.

I’ve watched the video tutorial several times, but I think a cinnamon, brown sugar and pecan mixture would work better instead of the spiced apple filling that they demonstrate. Then you could smother it in all the maple syrup you wanted. It looks so easy to use and I would love to wake up on a Saturday or Sunday morning to filled pancakes.

Then again, there’s always the Nordic Ware Waffled Pancake Pan… I am a huge fan of bananas and pecans over waffles.

Crunchy Deliciousness

I was searching through Cooking Light the other day and I found this amazing-looking recipe. Although I haven’t tried it yet, I saw that it got positive reviews on their website. So, for a tasty snack that’s also on the healthier side, try Cooking Light’s Maple-Pecan Granola and then let me know how you like it. I think this is one recipe I’m going to have to make for myself this weekend too.

Ingredients:

  • 2 cups regular oats
  • ½ cup pecan pieces
  • ½ cup maple syrup
  • ¼ cup packed brown sugar
  • 2 tablespoons canola oil
  • 1/8 teaspoon salt
  • Cooking spray

Directions:

  • Preheat oven to 300°.
  • Combine oats and next 5 ingredients (through salt); spread on large jelly-roll pan coated with cooking spray. Bake at 300° for 1 hour, stirring every 15 minutes. Cool completely.

And for a delicious start to your morning, Cooking Light suggests using the granola in a parfait. Just take a glass and alternate between layers of vanilla non-fat yogurt, maple-pecan granola and your favorite fruit. It’s quick, easy and a no-hassle, nutritious breakfast.
