I seem to have this conversation a lot: what do you do with catfish except fry it in cornmeal? Seriously. I’ve consulted the many, many cookbooks and they all just fry it in cornmeal with a little Tabasco or other type of chili seasoning, and then just serve it. Don’t get me wrong. I like fried catfish. It’s delicious. But sometimes I just want something new other than the same old recipe.
